Easter Bunny Cake

We have a little tradition that has been going for a couple of years that is so easy for Easter lunch. It may not look like a bought one but my 2 year old recognised it was meant to be a rabbit .. here’s some simple instructions

Bake or buy a round 20cm ish butter cake.

Cut in half

Frost in the middle to join together

A little frosting on the plate to hold it up

A simple cut for the head and turn the section removed into the tail

Frost all over.. we went white but you could colour the frosting and the coconut flakes

Cover in coconut and make eyes and nose from whatever is in the cupboard .. we found raisins and almonds

Use cardboard to make the ears and whiskers

Decorate with more coconut flakes that have been dyed using a few drops of green food colouring and hot water.. did this first and dried it out in the fridge .. super easy.. the kids love it and you are hostess with the mostest come Easter lunch time
